Ingredients:
60g vermicelli noodles
8 rice paper
12 cooked prawns (halved)
200g boiled pork fillet
100g bean sprouts
3 table spoons Vietnamese basil, chopped
2 table spoons coriander - use leaves only, chopped
16 lengths of garlic chives (optional)
3 small lettuce leaves, chopped
Method:
- boil vermicelli until white and soft, drain and let cool
- boil pork and sliced thinly
- de-vein and boil prawns and cut in half
- soften rice paper with warm water
- place ingredients in centre and fold. A couple of slices of pork and one prawn (halved) in each roll, vermicelli and add remaining ingredients to taste
makes 8 gorgeous rolls!
