1 cup self raising flour
1 cup wholemeal self raising flour
1 cup oat bran
3/4 cup caster sugar
60g margarine, melted
3/4 cup milk
2 eggs lightly beaten
1 cup mashed ripe banana (2 medium bananas)
Preheat oven to 180C, prepare a 12 hole muffin tin with oil.
Sift flour into large bowl, add oat bran and sugar. Make a well in centre of mixture.
Add combined margarine, milk, eggs and banana all at once and using a wooden spoon, stir until just combined.(do not over mix the batter, it should still be lumpy).
Spoon into prepared tin bake for 15 mins or until puffed and brown.
Transfer to wire rack to cool.
My extra tips – I like to add a little cinnamon to the before they go in the oven.
Also best to bake when no one is around otherwise they disappear before I can even get them on the wire rack.
