This versatile dish can be enjoyed at any time of the day and will keep for at least a week in the fridge. It makes a delicious breakfast with yoghurt and muesli or porridge, you can even use it in an upside-down or butter cake.
Ingredients:
- 700g mixed dried fruit (choose from apricots, pears, peaches, prunes, apples, figs, etc)
- 500ml water
- 300ml apple juice
- 200ml verjuice
- 1 lemon, zest only
- 1 vanilla bean, split
Method:
Add all the ingredients, except the fruit, to a large saucepan and cook over a high heat for 5 minutes, stirring. Bring to the boil, then reduce the heat and add the dried fruit. Simmer over very low heat, partly covered, for 50 minutes, stirring occasionally. Keep an eye on the compote – if it gets too dry, add a little more water. Serve warm or cold.
