  • 1 1/2 cups plain flour
  • 1/2 tsp bi-carb soda
  • 3/4 cup chopped pecan nuts (or walnuts)
  • 450g crushed pineapple (drained)
  • 2 eggs lighly beaten
  • 1 tsp ground cinnamon
  • 1/2 cup canola oil
  • 1 cup mashed banana
  • 1/2 cup sultanas
  • 1/2 cup castor sugar


  1. Greace 20cm ring pan, line base with greaseproof paper
  2. Combine sifted dry ingredients, sugar and pecans nuts in a large bowl. Stir in banana, well drained pineapple, oil, eggs and sultanas
  3. Spoon mixture into prepared pan. Bake in moderate oven for 45 minutes to 1 hour
  4. Stand 10 minutes before turning onto a wire rack to cool
  5. Keeping time 4 days
