  • 400g SR flour
  • 100g sugar
  • Rind of 1 orange
  • 100g polyunsaturated margarine or soft butter
  • 2 eggs


  • 200g almond meal
  • 100g sugar
  • 125ml water


Preheat oven to 190-200°C

Mix the margarine and flour together (using a food mixer or processor). Beat eggs, sugar and orange rind together. Add this mixture to flour & margarine and knead to a soft dough, adding water if necessary. Split pastry in half and put aside for 15mins.
For the filling-
Place sugar and water in a saucepan over low heat until sugar melts. As soon as mixture begins to boil, remove from heat. Add almond meal, mix well and allow mixture to cool.
Open out pastry onto baking paper* enough to line base of baking tray.
Place first layer of pastry onto baking tray that has been sprinkled with flour.
Spread the almond filling over pastry- do not spread to ends. Place second layer of pastry on top and seal ends. Cook in preheated oven for 25-30 mins.
Can be decorated with icing of your choice.

*Note: Can be made into a slice (as described) or made into individual biscuits by rolling out dough and cutting into small evenly sized portions.
