  • 2 egg
  • 1 cup sugar
  • 1 1/2 cups self raising flour
  • 1/2 cup milk
  • 115g butter
  • 1 lemon (juice and rind)
  • 1/4 cup castor sugar


For cake:

  1. Preheat oven to 180 degrees celsius
  2. Beat butter and sugar into cream
  3. Add eggs one at a time
  4. Gradually add flour and milk alternately and lemon rind
  5. Bake in a loaf tin for 45 mins

For lemon syrup:

  1. Place lemon juice and castor sugar in a saucepan on a low heat
  2. Remove cake from oven and spoon syrup over cake whilst warm and still in tin
