Ingredients

  • 2 cups self raising flour
  • 1 cup coconut
  • 1 cup sugar
  • 125g butter
  • 2 eggs
  • 1 tsp vanilla

Method

  1. Rub butter and SR flour together until it resembles bread crumbs
  2. Mix in sugar, coconut, vanilla and breaten eggs until soft dough (not sticky)
  3. Break off pieces and roll into balls and place on baking tray and cook on 180 degrees for 15-20 minutes
