Ingredients

  • 250g soft butter or margarine
  • 1 egg
  • 2 cups self raising flour
  • 1 lemon (juice and rind)
  • 1 cup sugar
  • 2 tsp vanilla essence
  • 2 cups plain flour

Method

  1. Preheat oven to 200 degrees
  2. Cream sugar and margarine
  3. agg egg, vanilla and rind
  4. Fold in flour and juice
  5. With floured hands, shape biscuits into small balls and place on baking tray
  6. Cook til pale brown
  7. Sprinkle with icing sugar after baking
