I’m baking some goodies to help Cancer Council raise much needed funds that go towards vital cancer research, support services and prevention programs. My 1st Biggest Morning Tea will be at my workplace, you can also donate online to help me reach my fundraising goal! Together, we can make a difference and tell Cancer to back off!🩷

1¾ cups all-purpose flour, 2½ tsp baking powder, ¾ cup sugar, 1 egg, ¼ cup melted butter, ¼ cup vegetable oil, ¾ cup milk, 2 tsp vanilla, 2 tsp lemon zest, 3 tsp lemon juice, 1½ cups blueberries. Preheat oven to 220°C. Line a 12-cup muffin tin. Mix dry ingredients (flour, baking powder, salt) and set aside. Whisk wet ingredients (sugar, egg, butter, oil, milk, vanilla, lemon zest/juice) until combined. Fold dry ingredients into wet ingredients just until combined. Gently fold in 1 cup of blueberries. Divide batter into liners (¾ full). Sprinkle with cinnamon-sugar topping and dot with remaining ½ cup blueberries. Bake at 220°C for 8 minutes, then reduce heat to 180°C and bake for 10–12 minutes more until a toothpick comes out clean.
