Honey Baked Granola

  • 50g Puffed quinoa
  • 80g Cocoa nibs
  • 600g Rolled oats
  • 200g Sunflower seeds
  • 100g Pumpkin seeds
  • 200g Almond, skin on, coarse chopped
  • 100g Walnuts, coarse chopped
  • 100g Sesame seeds
  • 1 teaspoon Cinnamon, ground
  • 1 teaspoon Ginger, ground
  • 1 teaspoon Salt
  • 400g Honey
  • 150g Unsalted butter
  • 100g Cranberries, dried
  • 100g Golden raisins
  • 100g Currants
  • 20g Freeze dried strawberry slices
  • 100g Flaked coconut


  1. Preheat the oven to 170°C
  2. Mix the quinoa, nibs, oats, sunflower, pumpkin & sesame seeds, almonds, walnuts, salt & spices together well in a large bowl.
  3. Heat the butter in a large saucepan to melt and add the honey. Bring to a boil and pour onto the dried ingredients mixing well with a wooden spoon, spatula or paddle attachment in a mixer.
  4. Spread the granola 1cm thick and evenly onto baking trays lined with baking paper and bake for 18 minutes or until golden brown. Make sure the granola is cooked sufficiently to ensure you get crunchy clusters.
  5. Leave to cool in the tray and break the granola pieces into a container with the remaining ingredients and mix well. Keep in a sealed container in your pantry.
